I had a max bid of $151. The bid before my sniped bid was $125. I would've expected my snipe bid to be $127.50, but my sniped bid was my max bid of $151. This isn't normal is it? Didn't matter much, because someone else still won the auction for $153.50 (and my sniped time was set to 3 seconds)..

Yes, it's normal. You set your absolute maximum snipe as $151.
You see your maximum in the history because someone else outbid you with a higher bid.

You lost because someone else bid higher. Does not matter what's your snipe time when someone else is willing to pay more than you were.

I guess I thought that if someone bid higher than your max bid, the sniper wouldn't even bid on your behalf. Instead you would get a message saying "Current bid is higher than your snipe"

In this case it sounds to me that the price before my bid was 125, then with 3 seconds left ibidder placed a $151 bid on my behalf, then some other person bid and won with a bid of $153.50.

The sniper does not know if somebody bid higher or not unless it's visible. In this case, the maximum of the other bidder was not visible, so the sniper placed your bid.

The price at the moment of sniping was $125.00 + $2.50 = $127.50, which is lower than your snipe.
