I won an auction tonight where the previous bid was 25.60. My maximum was set at 36.01. My winning bid went in at 35.00 instead of 26.10, which means I am now paying 8.90 more than I would have had I entered the bid myself!! Any help or advice would be appreciated. Very unhappy.

There are could be several reasons for that. Maybe it had a reserve price set at 35.00 or something.
You did not include the item number so I can't even check it.
You would pay the same thing if you bid manually.

The same happened with my item 140960074761 but I didnt win.

This is not the same.
Your snipe for item 140960074761 was 10.06, but auction ended at 10.56 which is higher than your snipe.
You can not win with lower bid. This has nothing to do with the sniper, that's how eBay works.

I mean that the prevous bid was GBP 6.00 and my bid sould be 6.5, not 10.06

As I mentioned before, the final price was 10.56. You lost because someone else bid higher.
There is one increment difference between your bid and the highest bid, so everything as expected.
Please check the last two bids in the bid history.

It bid 10.06 because you set this amount in the sniper.
Myibidder bids the amount you set. If nobody bid higher, you will win at the lowest price just enough to outbid the previous bidder by one increment only.
As you see for this auction, someone actually bid higher. So the other bidder won at one increment higher.

You'll see one increment higher only if nobody else bid higher -- meaning you won the item.

As I understand it should operate the 2nd way, shouldn't it? If so it should bid 6.5 in my case. And it absolutely doesn't matter who bode after this. What's wrong in my understanding?

I never said it will bid the lowest, I said it will bid the exact amount you set.
That's the only way it operates.

If it would bid 6.50, then the other bidder would win at it 7.00 and you lose. Do you want to lose if you were actually ready to pay up to 10.06 while someone is getting it cheaper?
It does matter who bids after you. It really does matter if someone else bid higher. You see your bid because this is the maximum you were ready to pay.

If the other bidder would not bid, you would win it at 6.00 (that's the previous bidder 5.50 plus one increment 0.50).
